The Pie Project: traditional apple pie

I’ll be the first to tell you — I’m not a cook. I’m not a completely terrible cook, I just don’t do it very often. The Pie Project is my attempt to haul myself out of my baking rut: make twenty five different pies within a year. Twenty five different recipes, twenty fives different fillings and twenty five attempts at pastry. That’s an average of a pie every two weeks or so. I can do that, right? A pie every 14.6 days.

I wanted to start easy — apple pie. The pie staple. I trawled the interwebs for the perfect (and simplest) recipe, my only criteria being that it had to contain apples and be easy to make. That is, until I stumbled upon this apple pie recipe. This recipe was not easy. This recipe came with an actual warning. It took me nearly six hours. But by golly, it tastes delicious.

Amazing. Joy’s instructions were clear and concise, very easy to follow. The only change I made was to add a little extra cinnamon, because, well, cinnamon.
